Flank Steak with Chimichurri Salsa & Roasted Potato
Flank Steak & Potatoes GRIlL IT - But pre-heat an oven to 375 degrees. Make sure the grill is hot and oiled. This piece of meat is thin so it doesn’t need a lot time on the grill. Let the steak rest for a fe w minute before digging in. Serve with Chimichurri.
Roast the par boiled potatoes until desired caramelization Serve the steak with potatoes and top with Chimichurri Salsa. For a more crunchier texture, give the potatoes a hard toss in a mixing bowl so you break up the potatoes a little. The small starchy bits the emerge around the potatoes will give them more of a crunch after you’ve re-heated them in the oven. Give them a 3 or 4 minute blast in a 450 degree oven. Set timer (always) so they dont burn. You can also re-heat the potatoes in a saute pan in a combination of oil and butter. To plate, you can slice the steak and place them along side the potatoes.
